Mini Frittata Bites

​

12 Servings

​

Ingredients:

 

 2 1/2 cups egg substitute (such as Egg Beaters)

 1/2 teaspoon salt

 1/2 teaspoon pepper

​

Toppings of Choice:

​

 Cheddar or other cheese (shredded)

​ Bacon (cooked and crumbled)

 Sausage (cooked and diced)

 Bell Pepper - red, green, orange or yellow (diced)

 Scallion (diced)

​

Directions:

​

Preheat oven to 350 degrees. Spray 12-cup muffin pan with non-stick cooking spray. Whisk eggs, salt and pepper until well blended. Using a ladle, fill each muffin tin 1/2 to 2/3 full. Add in toppings of choice. Bake for 20-25 minutes. The frittatas will appear puffed up when removed from oven, but will shrink to the level of the muffin tin when cool. Allow to cool in muffin tin for five minutes before removing. Place on serving platter or warming tray.
